Papas Duquesas
Papas Duquesas, also known as Duchess Potatoes, are a classic French side dish made with mashed potatoes, egg yolks, and butter.
Ingredients - Serves 6
- Parmesan cheese - 1/4 cup, grated
- Nutmeg - 1/4 teaspoon
- Ground black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Egg yolks - 2
- Butter - 1/2 cup, melted
- Potatoes - 2 pounds, peeled and cubed
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Mash the potatoes until smooth.
- Add the melted butter, egg yolks, salt, black pepper, and nutmeg to the mashed potatoes. Mix well to combine.
- Transfer the mashed potatoes to a piping bag fitted with a star tip.
- Pipe the mashed potatoes onto a baking sheet lined with parchment paper, forming small mounds.
- Sprinkle the grated Parmesan cheese over the piped mashed potatoes.
- Bake in the preheated oven for 10-12 minutes, or until the Papas Duquesas are golden and crispy.
- Serve hot as a delicious side dish.
