Soufflé Au Fromage

- Cream of tartar - 1/4 teaspoon
- Egg whites - 5
- Egg yolks - 4
- Gruyere cheese - 1 cup, grated
- Cayenne pepper - 1/8 teaspoon
- Salt - 1/2 teaspoon
- Milk - 1 cup
- All-purpose flour - 3 tablespoons
- Parmesan cheese - 2 tablespoons, grated
- Butter - 2 tablespoons

- Preheat the oven to 375°F. Butter a soufflé dish and sprinkle with Parmesan cheese.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes.
- Slowly whisk in the milk and bring to a boil. Reduce the heat and simmer, whisking constantly, until the sauce has thickened. Stir in the salt, cayenne pepper, and cheese until melted.

- Pour the mixture into the prepared soufflé dish and bake for 25 minutes, or until the soufflé is puffed and golden. Serve immediately.
