Ravioli Maremmani

Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Basil - 1 tablespoon, chopped
- Garlic - 2 cloves, minced
- Tomato sauce - 2 cups
- For the sauce -
- Nutmeg - 1/4 teaspoon
- Parmesan cheese - 1/2 cup, grated
- Ricotta cheese - 1 cup
- Spinach - 2 cups, cooked and drained
- For the filling -
- Salt - 1/2 teaspoon
- Eggs - 2
- Flour - 2 cups

- To make the pasta, combine the flour, eggs, and salt in a large bowl. Knead until a smooth dough forms. Let it rest for 30 minutes.
- For the filling, mix the spinach, ricotta, Parmesan, and nutmeg in a bowl. Season with salt and pepper.
- Roll out the pasta dough and cut into squares. Place a spoonful of filling in the center of each square. Fold the dough over to form a triangle, pressing the edges to seal.
- Bring a large pot of salted water to a boil. Add the ravioli and cook until they float to the top, about 3-4 minutes.
- While the ravioli is cooking, make the sauce. Heat the olive oil in a pan over medium heat. Add the garlic and cook until fragrant. Add the tomato sauce and basil and simmer for 10 minutes.
- Drain the ravioli and serve with the tomato sauce.
