  1. Pound the veal cutlets to flatten them to about 1/4 inch thickness.
  2. In a shallow dish, beat the eggs with salt and pepper.
  3. In another shallow dish, mix the breadcrumbs and grated Parmesan cheese.
  4. Dip each veal cutlet into the beaten eggs, then coat it with the breadcrumb mixture, pressing gently to adhere.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Add the breaded veal cutlets and cook until golden brown and cooked through, about 3-4 minutes per side.
  7. Remove the cutlets from the skillet and drain on paper towels.
  8. Preheat a panini press or grill pan.
  9. Slice the panini rolls in half horizontally.
  10. Place a cooked veal cutlet on the bottom half of each roll.
  11. Top each cutlet with 2 slices of mozzarella cheese, 2 tomato slices, and 4 fresh basil leaves.
  12. Cover with the top half of the roll.
  13. Grill the panini in the panini press or grill pan until the cheese is melted and the bread is crispy, about 3-4 minutes.
  14. Serve hot and enjoy!
