Spicy Rigatoni Vodka
A delicious pasta dish with a creamy, spicy tomato and vodka sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh basil leaves - 1/4 cup, chopped
- Grated parmesan cheese - 1/2 cup
- Heavy cream - 1 cup
- Canned crushed tomatoes - 1 (28 ounce) can
- Vodka - 1/2 cup
- Crushed red pepper flakes - 1/2 teaspoon
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Rigatoni - 1 pound
Let's Get Started
- Cook the rigatoni according to the package instructions, then drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until the garlic is golden, about 1 minute.
- Add the vodka to the skillet and simmer until it is reduced by half, about 2-3 minutes.
- Stir in the crushed tomatoes and heavy cream. Bring the sauce to a simmer and cook until it is thickened, about 10 minutes.
- Stir in the Parmesan cheese and basil, then season with salt and pepper.
- Add the cooked rigatoni to the skillet and toss until it is coated in the sauce.
- Serve the pasta hot, garnished with additional Parmesan cheese and basil if desired.
