Ingredients - Serves 4
- Fresh herbs (parsley, thyme, chives) - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Unsalted butter - 4 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Scallops - 12 large
Let's Get Started
- Pat the scallops dry and season with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat.
- Add the scallops and sear for about 2 minutes on each side, until golden brown. Remove from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute.
- Stir in the lemon juice and fresh herbs. Cook for another minute.
- Return the scallops to the skillet and spoon the sauce over them. Cook for another minute, until the scallops are coated in the sauce.
