Pan Seared Cod in White Wine Tomato Basil Sauce

Ingredients - Serves 4
- Lemon juice - 1 tablespoon
- Fresh basil - 1/4 cup, chopped
- Dry white wine - 1/2 cup
- Diced tomatoes - 1 can
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- All-purpose flour - For dusting
- Salt and pepper - To taste
- Cod fillets - 4 pieces
Let's Get Started
- Season both sides of cod with salt and pepper. Dust with flour.
- Heat oil and butter in a large pan over medium heat.
- Add cod to the pan, sear on both sides until golden and cooked through. Remove cod and set aside.
- In the same pan, add onion and garlic. Sauté until onions are translucent.
- Add tomatoes, wine, and basil. Simmer until the wine reduces by half.
- Add lemon juice, stir, and return the cod to the pan. Spoon sauce over the cod.
- Cook for a few more minutes, until the fish is heated through.
- Serve the cod with the sauce.
