Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Halibut fillets - 4 (6 ounce each)

- Preheat your oven to 425°F (220°C).
- Season the halibut fillets on both sides with salt and pepper.
- Heat the olive oil in a large, oven-safe skillet over medium-high heat.
- Add the halibut fillets to the skillet, skin-side down, and cook for about 3 minutes, until the skin is crispy.
- Flip the fillets and add the butter to the skillet. Allow the butter to melt, then spoon it over the fillets.
- Transfer the skillet to the preheated oven and roast for about 10 minutes, until the halibut is cooked through and flakes easily with a fork.
- Remove the skillet from the oven and drizzle the lemon juice over the fillets. Sprinkle with the chopped parsley before serving.
