- Tomato - 1, chopped
- Green onions - 2, chopped
- Pepper - To taste
- Salt - To taste
- Butter - 2 tablespoons
- Eggs - 4
Let's Get Started
- Preheat the oven to 400°F (200°C).
- In a clay pot or oven-safe dish, melt the butter over medium heat.
- Add the chopped green onions and tomato to the pot and sauté for a few minutes until softened.
- Crack the eggs into the pot, being careful not to break the yolks.
- Season with salt and pepper.
- Place the pot in the oven and bake for about 10 minutes, or until the eggs are cooked to your liking.
- Serve hot, straight from the pot.
