Pad See Ew
Pad See Ew is a popular Thai stir-fried noodle dish made with wide rice noodles, soy sauce, vegetables, and your choice of protein.
Ingredients - Serves 2
- White pepper - 1/2 teaspoon
- Sugar - 1 tablespoon
- Fish sauce - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Dark soy sauce - 3 tablespoons
- Carrots - 1, julienned
- Broccoli florets - 1 cup
- Eggs - 2
- Protein of choice (e.g. chicken, beef, tofu) - 8 oz, sliced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Wide rice noodles - 8 oz
Let's Get Started
- Soak the wide rice noodles in warm water for 10 minutes, then drain.
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add the minced garlic and cook until fragrant, about 1 minute.
- Add the protein of choice and stir-fry until cooked through, then push it to one side of the wok.
- Crack the eggs into the empty side of the wok and scramble them until almost fully cooked.
- Add the broccoli florets and julienned carrots to the wok and stir-fry for 2-3 minutes, until slightly tender.
- Add the drained rice noodles to the wok, followed by the dark soy sauce, oyster sauce, fish sauce, sugar, and white pepper.
- Stir-fry everything together for another 2-3 minutes, until the noodles are evenly coated and heated through.
- Taste and adjust the seasoning if needed.
- Serve hot and enjoy!
