Pacific Salmon Chowder
A hearty and comforting chowder made with fresh Pacific salmon, potatoes, and corn.
Ingredients - Serves 4
- Fresh dill - For garnish
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Pacific salmon - 1 pound, skin removed and cut into chunks
- Chicken broth - 4 cups
- Corn - 1 cup, frozen or fresh
- Potatoes - 2, diced
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the potatoes, corn, and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Add the salmon and cook until it is cooked through, about 5 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve the chowder hot, garnished with fresh dill.
