Ntolmadakia
Ntolmadakia is a traditional Greek dish made with grape leaves stuffed with a delicious rice and herb filling.
Ingredients - Serves 6
- Salt and pepper - To taste
- Lemon juice - 1/4 cup
- Fresh mint - 1/2 cup, chopped
- Fresh dill - 1/2 cup, chopped
- Short-grain rice - 1 cup
- Onions - 2, finely chopped
- Olive oil - 1/2 cup
- Grape leaves - 60, jarred or fresh
Let's Get Started
- Rinse the grape leaves and blanch them in boiling water for 2-3 minutes. Drain and set aside.
- Heat the olive oil in a large pan over medium heat. Add the onions and cook until soft.
- Add the rice to the pan and cook for a few minutes, stirring constantly.
- Add the dill, mint, lemon juice, salt, and pepper to the pan and stir to combine. Remove from heat.
- Lay a grape leaf flat and place a spoonful of the rice mixture in the center. Fold in the sides and roll up the leaf to encase the rice.
- Repeat with the remaining grape leaves and rice mixture.
- Place the stuffed grape leaves in a large pot and cover with water. Cover the pot and simmer for about an hour, until the rice is cooked and the grape leaves are tender.
- Serve the Ntolmadakia warm or at room temperature, with lemon wedges on the side if desired.
