Pacific Rim Tofu Stir Fry
A delightful mix of tofu and colorful vegetables, stir-fried with a tangy sauce inspired by flavors of the Pacific Rim.
Ingredients - Serves 4
- Rice - 2 cups, cooked
- Scallions - 2, sliced
- Snow peas - 1 cup
- Broccoli - 1 cup, florets
- Carrot - 1, julienned
- Green bell pepper - 1, sliced
- Red bell pepper - 1, sliced
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Tofu - 1 block, drained and cubed
Let's Get Started
- Marinate the tofu in soy sauce for 10 minutes.
- Heat the sesame oil in a wok or large pan over medium-high heat.
- Add the garlic and ginger and stir-fry for 1 minute.
- Add the tofu and stir-fry until golden brown, about 5 minutes. Remove and set aside.
- In the same pan, add the bell peppers, carrot, broccoli, and snow peas. Stir-fry until tender-crisp, about 5 minutes.
- Return the tofu to the pan and add the scallions. Stir-fry for another 2 minutes.
- Serve the stir-fry over cooked rice.
