Broccoli and Cheese Rice Casserole

Let's Get Started

  1. Preheat your oven to 350°F and lightly grease a casserole dish.
  2. Cook the rice according to package instructions.
  3. In a large skillet, melt the butter over medium heat. Add the onion and garlic and cook until softened.
  4. Add the broccoli to the skillet and cook until bright green and slightly tender.
  5. In a large bowl, combine the cooked rice, cooked broccoli and onion mixture, cream of mushroom soup, milk, and 1 1/2 cups of the cheese. Season with salt and pepper.
  6. Pour the mixture into the prepared casserole dish and top with the remaining cheese.
  7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
