Broccoli and Cheese Rice Casserole
This hearty and delicious casserole is packed with broccoli, cheese, and rice. It's a perfect side dish for any meal.
Ingredients - Serves 6
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Butter - 2 tablespoons
- Milk - 1/2 cup
- Cream of mushroom soup - 1 can
- Cheddar cheese - 2 cups, shredded
- Rice - 1 cup, uncooked
- Broccoli - 2 cups, chopped
Let's Get Started
- Preheat your oven to 350°F and lightly grease a casserole dish.
- Cook the rice according to package instructions.
- In a large skillet, melt the butter over medium heat. Add the onion and garlic and cook until softened.
- Add the broccoli to the skillet and cook until bright green and slightly tender.
- In a large bowl, combine the cooked rice, cooked broccoli and onion mixture, cream of mushroom soup, milk, and 1 1/2 cups of the cheese. Season with salt and pepper.
- Pour the mixture into the prepared casserole dish and top with the remaining cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
