Congee
Congee is a comforting Chinese rice porridge often served for breakfast or brunch, but it's also a popular meal when someone is feeling under the weather.
Ingredients - Serves 4
- Sesame oil - For serving
- Soy sauce - For serving
- Green onions - 2, chopped
- Salt - To taste
- Ginger - 1 inch piece, peeled and sliced
- Chicken broth - 2 cups
- Water - 8 cups
- Rice - 1 cup
Let's Get Started
- Rinse the rice under cold water until the water runs clear.
- Combine the rice, water, chicken broth, and ginger in a large pot.
- Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer, uncovered, for about 1 hour, or until the rice is very soft and the mixture has a creamy consistency.
- Stir the congee occasionally and add more water if needed.
- Season the congee with salt to taste.
- Serve the congee hot, garnished with chopped green onions. Offer soy sauce and sesame oil for individual seasoning.
