  1. Heat the olive oil in a large pan over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the tomatoes and red bell pepper, and cook until they soften.
  4. Add the rice and stir well to coat in the oil and vegetables.
  5. Pour in the white wine and let it simmer until the alcohol evaporates.
  6. Add the fish stock, bring to a boil, then reduce the heat and simmer for 10 minutes.
  7. Add the mixed seafood, cover the pan, and cook for another 10 minutes, or until the seafood is cooked and the rice is tender.
  8. Season with salt and pepper, and sprinkle with chopped parsley before serving.
