Arroz de Marisco

Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - A handful, chopped
- Mixed seafood - 1 kg (shrimp, clams, mussels, crab)
- Fish stock - 4 cups
- White wine - 1 cup
- Rice - 2 cups
- Red bell pepper - 1, chopped
- Tomatoes - 2, peeled and chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the tomatoes and red bell pepper, and cook until they soften.
- Add the rice and stir well to coat in the oil and vegetables.
- Pour in the white wine and let it simmer until the alcohol evaporates.
- Add the fish stock, bring to a boil, then reduce the heat and simmer for 10 minutes.
- Add the mixed seafood, cover the pan, and cook for another 10 minutes, or until the seafood is cooked and the rice is tender.
- Season with salt and pepper, and sprinkle with chopped parsley before serving.
