Oyster Chowder
This creamy and flavorful oyster chowder is made with fresh oysters, potatoes, vegetables, and herbs.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Salt and pepper - To taste
- Fresh thyme - 1 teaspoon, chopped
- Fresh oysters - 1 pint, shucked
- Milk - 2 cups
- Chicken broth - 4 cups
- All-purpose flour - 2 tablespoons
- Potatoes - 2 medium, peeled and diced
- Carrot - 1 medium, diced
- Celery - 2 stalks, diced
- Onion - 1 medium, diced
- Butter - 2 tablespoons
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the diced onion, celery, and carrot. Cook until the vegetables are tender, about 5 minutes.
- Sprinkle the flour over the vegetables and stir to coat.
- Gradually add the chicken broth, stirring constantly to prevent lumps.
- Add the diced potatoes and bring the mixture to a boil.
- Reduce the heat and simmer until the potatoes are cooked through, about 10 minutes.
- Stir in the milk, fresh oysters, and chopped thyme. Cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve the oyster chowder hot, garnished with fresh parsley.
