Kamskjell Med Blomkålpuré
This is a classic Norwegian dish featuring seared scallops served with a creamy cauliflower puree.
Ingredients - Serves 4
- Fresh parsley - For garnish
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Milk - 1/2 cup
- Butter - 2 tablespoons
- Cauliflower - 1 head, cut into florets
- Scallops - 12 large
Let's Get Started
- Steam the cauliflower florets until they are very soft, about 15 minutes.
- Transfer the cauliflower to a blender and add the butter, milk, salt, and pepper. Blend until smooth.
- Heat the olive oil in a pan over high heat.
- Season the scallops with salt and pepper and add them to the pan. Cook for about 2 minutes on each side, or until they are golden brown and cooked through.
- Serve the scallops on a bed of cauliflower puree and garnish with fresh parsley.
