Oursinade
Oursinade is a traditional Mediterranean dish made from sea urchins. It's a rich and creamy soup that's perfect for a special occasion.
Ingredients - Serves 4
- Fresh parsley - For garnish
- Salt and pepper - To taste
- Cream - 1 cup
- White wine - 1 cup
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Sea urchins - 12
Let's Get Started
- Clean the sea urchins by cutting around the mouth and removing the insides. Rinse and set aside.
- Heat the olive oil in a large pot over medium heat. Add the garlic and cook until fragrant.
- Add the sea urchins and white wine to the pot. Cover and simmer for 10 minutes.
- Remove the sea urchins with a slotted spoon and set aside. Add the cream to the pot and bring to a simmer.
- Season the soup with salt and pepper. Ladle into bowls and top with the sea urchins and fresh parsley.
