Let's Get Started

  1. Clean the sea urchins by cutting around the mouth and removing the insides. Rinse and set aside.
  2. Heat the olive oil in a large pot over medium heat. Add the garlic and cook until fragrant.
  3. Add the sea urchins and white wine to the pot. Cover and simmer for 10 minutes.
  4. Remove the sea urchins with a slotted spoon and set aside. Add the cream to the pot and bring to a simmer.
  5. Season the soup with salt and pepper. Ladle into bowls and top with the sea urchins and fresh parsley.
