Let's Get Started

  1. Rinse the oysters under cold water and drain well.
  2. In a bowl, whisk together the eggs, tapioca starch, water, garlic, green onions, salt, and white pepper.
  3. Heat the oil in a non-stick frying pan over medium heat.
  4. Pour the egg mixture into the pan and spread it out evenly.
  5. Add the oysters on top of the egg mixture.
  6. Cook for about 5 minutes, or until the bottom is golden brown.
  7. Flip the omelette and cook for another 3-5 minutes, or until the other side is golden brown.
  8. Serve the omelette hot with chili sauce on the side.
