Onion and Potato Soup
A hearty and comforting soup made with onions, potatoes, and a blend of spices.
Ingredients - Serves 4
- Cream - 1/2 cup
- Thyme - 1 teaspoon
- Salt and pepper - To taste
- Chicken broth - 4 cups
- Garlic - 2 cloves, minced
- Potatoes - 4 medium, peeled and diced
- Onions - 2 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft, about 5 minutes.
- Add the potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth. You can also transfer the soup to a regular blender and puree it in batches, then return it to the pot.
- Stir in the cream and heat the soup for a few more minutes, until it's heated through. Serve hot.
