Onion and Potato Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 20 minutes.
  4. Use an immersion blender to puree the soup until smooth. You can also transfer the soup to a regular blender and puree it in batches, then return it to the pot.
  5. Stir in the cream and heat the soup for a few more minutes, until it's heated through. Serve hot.
