Ingredients - Serves 4
- Nutmeg - 1/4 teaspoon
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Cream - 1/2 cup
- Vegetable broth - 4 cups
- Potatoes - 2 medium, peeled and diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Spinach - 500 grams
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the diced potatoes and cook for 5 minutes, stirring occasionally.
- Add the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
- Add the spinach to the pot and cook for 2-3 minutes, until wilted.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the cream. Season with salt, pepper, and nutmeg.
- Simmer for an additional 5 minutes to heat through.
