Chicken and Corn Soup
A hearty and comforting soup made with tender chicken, sweet corn, and a creamy broth.
Ingredients - Serves 4
- Cream - 1/2 cup
- Salt and pepper - To taste
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Chicken broth - 4 cups
- Sweet corn - 1 can, drained
- Chicken breast - 2, boneless and skinless
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until soft, about 5 minutes.
- Add the chicken breast and cook until no longer pink, about 10 minutes.
- Add the chicken broth, corn, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Remove the chicken from the pot and shred it with two forks. Return it to the pot.
- Stir in the cream and cook for another 5 minutes.
- Serve the soup hot, garnished with fresh herbs if desired.
