Chicken and Corn Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until soft, about 5 minutes.
  3. Add the chicken breast and cook until no longer pink, about 10 minutes.
  4. Add the chicken broth, corn, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  5. Remove the chicken from the pot and shred it with two forks. Return it to the pot.
  6. Stir in the cream and cook for another 5 minutes.
  7. Serve the soup hot, garnished with fresh herbs if desired.
