  1. In a large saucepan, combine the onions, apples, brown sugar, vinegar, raisins, cinnamon, ginger, and salt.
  2. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer, uncovered, for about 1 hour, or until the chutney is thick and the apples are tender.
  3. Stir the chutney occasionally as it cooks to prevent it from sticking to the bottom of the pan.
  4. Once the chutney is done, let it cool before transferring it to jars. It can be stored in the refrigerator for up to 2 weeks.
