Olathe Sweet Corn Soup
A creamy, sweet soup made from fresh Olathe sweet corn, perfect for a light lunch or a starter.
Ingredients - Serves 4
- Chives - For garnish
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Chicken broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Butter - 2 tablespoons
- Olathe sweet corn - 4 ears, kernels removed
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until soft, about 5 minutes.
- Add the corn kernels and cook for another 5 minutes.
- Add the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree until smooth.
- Stir in the heavy cream and season with salt and pepper.
- Serve the soup hot, garnished with chives.
