Olathe Sweet Corn Soup

Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic and cook until soft, about 5 minutes.
  3. Add the corn kernels and cook for another 5 minutes.
  4. Add the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree until smooth.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Serve the soup hot, garnished with chives.
