Oden
Oden is a traditional Japanese hot pot dish made with various ingredients simmered in a soy-based broth.
Ingredients - Serves 4
- Green onions - 4 stalks, chopped
- Tofu - 1 block, cut into cubes
- Fish cakes - 4 pieces
- Boiled eggs - 4
- Konnyaku (konjac) - 1 block, cut into bite-sized pieces
- Daikon radish - 1 large, peeled and cut into thick rounds
- Sugar - 1 tablespoon
- Sake - 2 tablespoons
- Mirin - 2 tablespoons
- Soy sauce - 1/4 cup
- Dashi stock - 4 cups
- Kombu (dried kelp) - 2 sheets
Let's Get Started
- Soak the kombu in water for 30 minutes to soften.
- In a large pot, combine the dashi stock, soy sauce, mirin, sake, and sugar. Bring to a boil.
- Add the soaked kombu to the pot and simmer for 30 minutes to infuse the broth with flavor.
- Add the daikon radish and konnyaku to the pot and simmer for another 30 minutes, or until they are tender.
- Add the boiled eggs, fish cakes, and tofu to the pot and simmer for an additional 10 minutes.
- Remove the kombu from the pot and discard.
- Serve the oden in individual bowls, garnished with chopped green onions.
