Navratan Korma
Navratan Korma is a rich, creamy and flavorful dish that literally translates to 'nine-gem curry'. The 'gems' are the fruits, vegetables and nuts that make up the curry.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Fresh cream - 1/2 cup
- Garam masala powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Ginger-garlic paste - 1 tablespoon
- Tomato puree - 1 cup
- Onion - 1, finely chopped
- Raisins - 1/4 cup
- Cashew nuts - 1/4 cup
- Paneer - 1/2 cup, cubed
- Mixed vegetables - 2 cups, chopped
Let's Get Started
- Heat oil in a pan and sauté the onions until golden brown.
- Add the ginger-garlic paste and sauté until the raw smell goes away.
- Add the tomato puree, turmeric powder, red chili powder, garam masala powder and salt. Cook until the oil separates from the masala.
- Add the mixed vegetables, paneer, cashew nuts and raisins. Cook for a few minutes.
- Add enough water to make a gravy. Cover and cook until the vegetables are done.
- Stir in the fresh cream and remove from heat.
- Serve the Navratan Korma hot with naan or rice.
