Haymarket Rice Pudding

Ingredients - Serves 6
- Raisins - 1/2 cup
- Ground cinnamon - 1/2 teaspoon
- Vanilla extract - 1 teaspoon
- Sugar - 2/3 cup
- Whole milk - 4 cups
- Salt - 1/4 teaspoon
- Water - 1 cup
- Short grain white rice - 1/2 cup
Let's Get Started
- In a medium saucepan, combine the rice, water, and salt. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed.
- Stir in the milk, sugar, and vanilla extract. Increase heat to medium and cook, stirring frequently, for 1 hour.
- Stir in the cinnamon and raisins and continue to cook, stirring frequently, for another 30 minutes, or until the pudding is thick and creamy.
- Remove from heat and let cool. The pudding will thicken as it cools.
- Serve warm or chilled, sprinkled with additional cinnamon if desired.
