Arroz Con Dulce
Arroz con Dulce is a traditional Puerto Rican rice pudding made with coconut milk, rice, spices, and sweetened condensed milk.
Ingredients - Serves 6
- Ground cinnamon - 1/2 teaspoon
- Raisins - 1/2 cup
- Vanilla extract - 1 teaspoon
- Sweetened condensed milk - 1 can (14 oz)
- Salt - 1/4 teaspoon
- Cloves - 4
- Cinnamon sticks - 2
- Medium-grain rice - 1 cup
- Water - 2 cups
- Coconut milk - 2 cups
Let's Get Started
- In a large saucepan, combine the coconut milk, water, rice, cinnamon sticks, cloves, and salt.
- Bring to a boil over medium heat, then reduce the heat to low and simmer for 30 minutes, or until the rice is cooked and the liquid is absorbed.
- Stir in the sweetened condensed milk, vanilla extract, raisins, and ground cinnamon.
- Cook for an additional 10 minutes, stirring occasionally, until the mixture thickens.
- Remove the cinnamon sticks and cloves.
- Transfer the Arroz con Dulce to a serving dish and sprinkle with additional ground cinnamon, if desired.
- Serve warm or chilled.
