Ndengu Recipe
This is a classic Kenyan dish made with green grams (mung beans) and coconut milk.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Water - 3 cups
- Salt - To taste
- Curry powder - 1 tablespoon
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Tomatoes - 2 medium, chopped
- Onion - 1 medium, chopped
- Coconut milk - 1 can
- Green grams (mung beans) - 1 cup
Let's Get Started
- Rinse the green grams and soak them in water for at least 2 hours.
- In a large pot, heat some oil over medium heat.
- Add the onions and cook until they are soft and translucent.
- Add the garlic, ginger, and curry powder and cook for another minute.
- Add the tomatoes and cook until they are soft and mushy.
- Drain the green grams and add them to the pot.
- Add the water and salt and bring to a boil.
- Reduce the heat and simmer for 30-40 minutes, or until the green grams are soft and fully cooked.
- Add the coconut milk and cilantro and simmer for another 5 minutes.
- Serve hot with rice or chapati.
