Ndengu Recipe

This is a classic Kenyan dish made with green grams (mung beans) and coconut milk.

Ingredients - Serves 4

Let's Get Started

  1. Rinse the green grams and soak them in water for at least 2 hours.
  2. In a large pot, heat some oil over medium heat.
  3. Add the onions and cook until they are soft and translucent.
  4. Add the garlic, ginger, and curry powder and cook for another minute.
  5. Add the tomatoes and cook until they are soft and mushy.
  6. Drain the green grams and add them to the pot.
  7. Add the water and salt and bring to a boil.
  8. Reduce the heat and simmer for 30-40 minutes, or until the green grams are soft and fully cooked.
  9. Add the coconut milk and cilantro and simmer for another 5 minutes.
  10. Serve hot with rice or chapati.
