Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Salt - To taste
- Mexican beer - 1 cup
- Onion - 1/2, chopped
- Garlic - 2 cloves
- Tomatoes - 2 large
- Pasilla chiles - 2, dried

- Remove the stems and seeds from the pasilla chiles. Toast them in a dry pan over medium heat until they become fragrant, then soak in hot water for 15 minutes.
- While the chiles are soaking, roast the tomatoes in a pan until their skins start to blister and blacken.
- In a blender, combine the soaked chiles, roasted tomatoes, garlic, onion, and beer. Blend until smooth.
- Pour the salsa into a pan and simmer over medium heat for about 10 minutes, until it thickens slightly.
- Season with salt to taste, then stir in the chopped cilantro.
- Serve warm or at room temperature. This salsa is perfect for drizzling over grilled meats or scooping up with tortilla chips.
