Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F (200°C).
  2. Cut the eggplants in half lengthwise and score the flesh in a diamond pattern.
  3. Place the eggplants cut-side up on a baking sheet and bake for 20 minutes, or until tender.
  4. While the eggplants are baking, combine the miso paste, mirin, sugar, and sake in a small saucepan over medium heat. Stir until the sugar is dissolved.
  5. Remove the eggplants from the oven and brush the miso glaze over the cut side of each eggplant.
  6. Return the eggplants to the oven and broil for 3-5 minutes, or until the glaze is bubbling and starting to brown.
  7. Sprinkle the eggplants with the toasted sesame seeds and green onions before serving.
