Nasu Dengaku
Nasu Dengaku is a traditional Japanese dish that features grilled eggplant topped with a sweet and savory miso glaze.
Ingredients - Serves 4
- Green onions - 2, thinly sliced
- Sesame seeds - 1 tablespoon, toasted
- Sake - 1 tablespoon
- Sugar - 1 tablespoon
- Mirin - 2 tablespoons
- White miso paste - 3 tablespoons
- Eggplant - 2 large
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Cut the eggplants in half lengthwise and score the flesh in a diamond pattern.
- Place the eggplants cut-side up on a baking sheet and bake for 20 minutes, or until tender.
- While the eggplants are baking, combine the miso paste, mirin, sugar, and sake in a small saucepan over medium heat. Stir until the sugar is dissolved.
- Remove the eggplants from the oven and brush the miso glaze over the cut side of each eggplant.
- Return the eggplants to the oven and broil for 3-5 minutes, or until the glaze is bubbling and starting to brown.
- Sprinkle the eggplants with the toasted sesame seeds and green onions before serving.
