Lanzhou Beef Noodles
A traditional Chinese dish, Lanzhou Beef Noodles feature a flavorful broth, tender beef, and hand-pulled noodles.
Ingredients - Serves 4
- Cilantro - A handful, chopped
- Scallions - 2, chopped
- Chinese wheat noodles - 500 grams
- Soy sauce - 2 tablespoons
- Salt - To taste
- Sichuan peppercorns - 1 tablespoon
- Star anise - 2
- Garlic - 5 cloves, smashed
- Ginger - 3 slices
- Daikon radish - 1 large, peeled and cut into chunks
- Beef shank - 500 grams
Let's Get Started
- Place the beef shank in a pot and cover with cold water. Bring to a boil and cook for a few minutes. Drain and rinse the beef.
- Return the beef to the pot and add the daikon radish, ginger, garlic, star anise, and Sichuan peppercorns. Cover with water and bring to a boil.
- Reduce the heat to low and simmer for 2 hours, until the beef is tender.
- Remove the beef and strain the broth. Season with salt and soy sauce.
- Cook the noodles according to the package instructions.
- Slice the beef and divide among the bowls. Top with the cooked noodles and hot broth.
- Garnish with the chopped scallions and cilantro before serving.
