  1. Place the beef shank in a pot and cover with cold water. Bring to a boil and cook for a few minutes. Drain and rinse the beef.
  2. Return the beef to the pot and add the daikon radish, ginger, garlic, star anise, and Sichuan peppercorns. Cover with water and bring to a boil.
  3. Reduce the heat to low and simmer for 2 hours, until the beef is tender.
  4. Remove the beef and strain the broth. Season with salt and soy sauce.
  5. Cook the noodles according to the package instructions.
  6. Slice the beef and divide among the bowls. Top with the cooked noodles and hot broth.
  7. Garnish with the chopped scallions and cilantro before serving.
