Mustikkakeitto
Mustikkakeitto is a traditional Finnish blueberry soup that is served both warm and cold. It is a refreshing and delicious dessert.
Ingredients - Serves 4
- Cold water - 2 tablespoons
- Cornstarch - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Sugar - 1/2 cup
- Water - 4 cups
- Blueberries - 500g
Let's Get Started
- In a large saucepan, combine the blueberries, water, sugar, lemon juice, and cinnamon.
- Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
- In a small bowl, mix the cornstarch with cold water to make a slurry.
- Slowly pour the cornstarch slurry into the blueberry mixture, stirring constantly.
- Continue to cook for another 5 minutes, or until the soup has thickened.
- Remove from heat and let the soup cool slightly.
- Serve the mustikkakeitto warm or refrigerate for a few hours to serve it cold.
- Garnish with fresh blueberries or a dollop of whipped cream, if desired.
