Mushroom and Zucchini Pasta
This delicious pasta dish combines sautéed mushrooms and zucchini with a flavorful garlic and herb sauce.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 1/4 cup, grated
- Salt and pepper - To taste
- Red pepper flakes - 1/2 teaspoon
- Italian seasoning - 1 teaspoon
- Garlic - 3 cloves, minced
- Zucchini - 2 medium, sliced
- Mushrooms - 8 ounces, sliced
- Olive oil - 2 tablespoons
- Pasta - 8 ounces
Let's Get Started
- Cook the pasta according to package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the mushrooms and zucchini to the skillet and cook until they start to soften, about 5 minutes.
- Add the minced garlic, Italian seasoning, red pepper flakes, salt, and pepper. Cook for an additional 2 minutes.
