Mushroom and Brie Soup
This creamy mushroom and brie soup is a comforting and flavorful dish that is perfect for chilly days.
Ingredients - Serves 6
- Chives - For garnish
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Brie cheese - 8 ounces, rind removed and cubed
- Fresh thyme - 1 teaspoon
- Chicken or vegetable broth - 4 cups
- Mushrooms - 1 pound, sliced
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Butter - 4 tablespoons
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the sliced mushrooms and cook until they release their moisture and start to brown, about 10 minutes.
- Pour in the chicken or vegetable broth and add the fresh thyme. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and add the cubed brie cheese. Stir until the cheese is melted and incorporated into the soup.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve the soup hot, garnished with chopped chives.
