Mushroom and Brie Soup

Let's Get Started

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 10 minutes.
  4. Pour in the chicken or vegetable broth and add the fresh thyme. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Return the soup to the pot and add the cubed brie cheese. Stir until the cheese is melted and incorporated into the soup.
  7. Stir in the heavy cream and season with salt and pepper to taste.
  8. Simmer for an additional 5 minutes to allow the flavors to meld together.
  9. Serve the soup hot, garnished with chopped chives.
