  1. In a large pot, melt the butter over medium heat.

  3. Add the mussels, wine, half of the parsley, thyme, bay leaf, salt, and pepper.
  4. Cover the pot and increase the heat to high.
  5. Cook until all the mussels are open, about 5 to 7 minutes.
  6. Discard any mussels that do not open.
  7. Sprinkle with the remaining parsley before serving.
