Moo Shu Chicken Stir Fry
This Moo Shu Chicken Stir Fry is a delicious and flavorful Chinese dish made with tender chicken, crisp vegetables, and a savory sauce.
Ingredients - Serves 4
- Tortillas or pancakes - 4
- Scallions - 4, sliced
- Hoisin sauce - 3 tablespoons
- Eggs - 2, beaten
- Wood ear mushrooms - 1/2 cup, soaked and sliced
- Carrots - 2, julienned
- Cabbage - 2 cups, shredded
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Sesame oil - 2 tablespoons
- Soy sauce - 3 tablespoons
- Chicken breast - 2 boneless, skinless, thinly sliced
Let's Get Started
- In a small bowl, marinate the chicken with soy sauce and sesame oil for 10 minutes.
- Heat a tablespoon of sesame oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger, and stir fry for 1 minute until fragrant.
- Add the marinated chicken and cook until browned and cooked through, about 5-6 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of sesame oil and stir fry the cabbage, carrots, and wood ear mushrooms for 3-4 minutes until crisp-tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space.
- Scramble the eggs until cooked, then mix them with the vegetables.
- Return the cooked chicken to the skillet and add hoisin sauce and sliced scallions.
- Stir fry for another 2-3 minutes until everything is well coated and heated through.
- Serve the Moo Shu Chicken stir fry with tortillas or pancakes for wrapping.
