Stir Fried Rice Noodles
A quick and easy stir-fry recipe with rice noodles, vegetables, and soy sauce.
Ingredients - Serves 4
- Eggs - 2, beaten
- Scallions - 2, sliced
- Soy sauce - 3 tablespoons
- Mixed vegetables - 2 cups, sliced
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Rice noodles - 8 ounces
Let's Get Started
- Soak the rice noodles in warm water for 10 minutes, then drain and set aside.
- Heat the oil in a large wok or frying pan over medium heat.
- Add the garlic and cook for 1 minute.
- Add the mixed vegetables and stir-fry for 5 minutes.
- Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked.
- Add the drained noodles and soy sauce to the pan. Stir everything together and cook for another 2-3 minutes.
- Garnish with the sliced scallions and serve.
