Stir Fried Rice Noodles

Ingredients - Serves 4

Let's Get Started

  1. Soak the rice noodles in warm water for 10 minutes, then drain and set aside.
  2. Heat the oil in a large wok or frying pan over medium heat.
  3. Add the garlic and cook for 1 minute.
  4. Add the mixed vegetables and stir-fry for 5 minutes.
  5. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  6. Add the drained noodles and soy sauce to the pan. Stir everything together and cook for another 2-3 minutes.
  7. Garnish with the sliced scallions and serve.
