Mole Poblano
Mole Poblano is a traditional Mexican dish from Puebla. It's a rich, dark sauce with a hint of chocolate, served over meat.
Ingredients - Serves 6
- Salt - To taste
- Chicken broth - 4 cups
- Dark chocolate - 100 grams
- Cloves - 5
- Cinnamon stick - 1
- Raisins - 1/2 cup
- Almonds - 1/2 cup
- Onion - 1, large
- Garlic - 5 cloves
- Tomatoes - 5, large
- Pasilla chiles - 5, seeds and stems removed
- Mulato chiles - 5, seeds and stems removed
- Ancho chiles - 5, seeds and stems removed
- Chicken - 1 whole
Let's Get Started
- Boil the chicken in a large pot with salt until it's cooked. Reserve the broth.
- Toast the chiles in a dry pan over medium heat until they become aromatic. Then, soak them in hot water for 30 minutes.
- Roast the tomatoes, garlic, and onion in the oven until they're charred.
- Fry the almonds and raisins in a pan with a little oil until they're golden.
- Grind the cinnamon and cloves in a spice grinder.
- Blend the chiles, tomatoes, garlic, onion, almonds, raisins, cinnamon, cloves, and a cup of the chicken broth until smooth.
- Fry the sauce in a pot with a little oil for about 10 minutes.
- Add the chocolate and stir until it's melted.
- Add the rest of the chicken broth and simmer for about an hour.
- Serve the mole sauce over the cooked chicken.
