Ingredients - Serves 6

Let's Get Started

  1. Boil the chicken in a large pot with salt until it's cooked. Reserve the broth.
  2. Toast the chiles in a dry pan over medium heat until they become aromatic. Then, soak them in hot water for 30 minutes.
  3. Roast the tomatoes, garlic, and onion in the oven until they're charred.
  4. Fry the almonds and raisins in a pan with a little oil until they're golden.
  5. Grind the cinnamon and cloves in a spice grinder.
  6. Blend the chiles, tomatoes, garlic, onion, almonds, raisins, cinnamon, cloves, and a cup of the chicken broth until smooth.
  7. Fry the sauce in a pot with a little oil for about 10 minutes.
  8. Add the chocolate and stir until it's melted.
  9. Add the rest of the chicken broth and simmer for about an hour.
  10. Serve the mole sauce over the cooked chicken.
