Let's Get Started

  1. Place the dried peaches in a large pot and cover with the water.
  2. Add the cinnamon stick and cloves.
  3. Bring the mixture to a boil, then reduce the heat and simmer for 2 hours, or until the peaches are soft and the liquid has reduced by half.
  4. Remove from the heat and add the sugar, stirring until it's fully dissolved.
  5. Stir in the lemon juice, then let the mixture cool to room temperature.
  6. Once cooled, strain the mixture through a fine mesh sieve, pressing on the peaches to extract as much juice as possible.
  7. Serve the mocochinchi over ice, garnished with a slice of lemon if desired.
