Miyan Kuka
Miyan Kuka is a traditional Nigerian soup made with baobab leaves and other flavorful ingredients.
Ingredients - Serves 6
- Water - 6 cups
- Salt - To taste
- Seasoning cubes - 2
- Ground crayfish - 2 tablespoons
- Smoked fish - 1 cup, flaked
- Stockfish - 1 cup, soaked
- Pepper - 2 habanero peppers, chopped
- Tomatoes - 2 medium, chopped
- Onion - 1 medium, chopped
- Palm oil - 1/4 cup
- Baobab leaves - 2 cups, dried
Let's Get Started
- Rinse the dried baobab leaves in cold water to remove any dirt or debris.
- In a large pot, heat the palm oil over medium heat.
- Add the chopped onion, tomatoes, and pepper. Cook until softened, about 5 minutes.
- Add the soaked stockfish, smoked fish, ground crayfish, seasoning cubes, and salt. Stir well.
- Pour in the water and bring to a boil.
- Reduce the heat to low and add the dried baobab leaves. Simmer for 30 minutes, stirring occasionally.
- Taste and adjust the seasoning if needed.
- Serve hot with your choice of swallow (e.g., fufu, pounded yam, or eba).
