Miso Carbonara

Ingredients - Serves 4

Let's Get Started

  1. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a bowl, whisk together the eggs, Parmesan cheese, and miso paste until well combined.
  3. In a large pan, cook the bacon over medium heat until crispy. Remove the bacon from the pan and set aside.
  4. In the same pan, add the garlic and cook until fragrant.
  5. Add the cooked spaghetti to the pan and toss to coat in the garlic and bacon fat.
  6. Remove the pan from the heat. Slowly pour in the egg mixture, stirring constantly to create a creamy sauce. If the sauce is too thick, add some of the reserved pasta water.
  7. Add the cooked bacon, black pepper, and green onions to the pan and toss to combine.
  8. Serve the Miso Carbonara hot, with extra Parmesan cheese on top if desired.
