Miso Carbonara
A fusion of Italian and Japanese cuisine, this Miso Carbonara is a creamy pasta dish with a unique umami flavor.
Ingredients - Serves 4
- Green onions - 2, chopped
- Black pepper - To taste
- Garlic - 2 cloves, minced
- Bacon - 200 grams, chopped
- White miso paste - 2 tablespoons
- Parmesan cheese - 1 cup, grated
- Eggs - 2 large
- Spaghetti - 400 grams
Let's Get Started
- Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a bowl, whisk together the eggs, Parmesan cheese, and miso paste until well combined.
- In a large pan, cook the bacon over medium heat until crispy. Remove the bacon from the pan and set aside.
- In the same pan, add the garlic and cook until fragrant.
- Add the cooked spaghetti to the pan and toss to coat in the garlic and bacon fat.
- Remove the pan from the heat. Slowly pour in the egg mixture, stirring constantly to create a creamy sauce. If the sauce is too thick, add some of the reserved pasta water.
- Add the cooked bacon, black pepper, and green onions to the pan and toss to combine.
- Serve the Miso Carbonara hot, with extra Parmesan cheese on top if desired.
