Mexican Tortilla
A delicious and versatile Mexican dish made with corn tortillas and a variety of fillings.
Ingredients - Serves 4
- Sour cream - 1/2 cup
- Avocado - 1, sliced
- Salt - To taste
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Jalapeno - 1, seeded and minced
- Tomato - 1, diced
- Bell pepper - 1, diced
- Onion - 1, diced
- Chicken breast - 2, cooked and shredded
- Corn tortillas - 8
Let's Get Started
- In a large skillet, heat some oil over medium heat.
- Add the diced onion, bell pepper, and jalapeno. Cook until softened, about 5 minutes.
- Add the shredded chicken, diced tomato, and salt. Cook for another 5 minutes.
- In a separate skillet, heat the corn tortillas until warm and pliable.
- Place a spoonful of the chicken mixture onto each tortilla and fold in half.
- Serve the tortillas with sliced avocado, chopped cilantro, sour cream, and a squeeze of lime juice.
