Chicken Tikka Masala Burrito
A fusion of Indian and Mexican cuisine, this burrito is filled with flavorful chicken tikka masala, rice, and beans.
Ingredients - Serves 4
- Salsa - For serving
- Sour cream - For serving
- Cilantro - 1/4 cup, chopped
- Cheddar cheese - 1 cup, shredded
- Large flour tortillas - 4
- Black beans - 1 can, drained and rinsed
- Basmati rice - 2 cups
- Tikka masala sauce - 1 jar
- Chicken breast - 2, boneless and skinless
Let's Get Started
- Cook the chicken in a pan over medium heat until no longer pink. Add the tikka masala sauce and simmer for 10 minutes.
- While the chicken is cooking, prepare the basmati rice according to the package instructions.
- Warm the tortillas in a dry skillet over medium heat until pliable.
- To assemble the burritos, lay out a tortilla and spread a layer of rice in the center. Top with a scoop of beans, the chicken tikka masala, and a sprinkle of cheese and cilantro.
- Fold in the sides of the tortilla and roll up tightly. Repeat with the remaining tortillas and fillings.
- Serve the burritos with sour cream and salsa on the side.
