Mexican Tacos al Pastor
Tacos al Pastor are a popular Mexican street food made with marinated pork, pineapple, and traditional spices.
Ingredients - Serves 4
- Lime wedges - For serving
- Onion - 1/2 cup, diced
- Cilantro - 1/2 cup, chopped
- Fresh pineapple - 1 cup, diced
- Corn tortillas - 12
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 4 cloves, minced
- Pineapple juice - 1 cup
- Achiote paste - 2 tablespoons
- Pork shoulder - 2 pounds, thinly sliced
Let's Get Started
- In a large bowl, combine the achiote paste, pineapple juice, minced garlic, cumin, oregano, salt, and pepper to make the marinade.
- Add the thinly sliced pork shoulder to the marinade and mix well to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill or a grill pan over medium-high heat.
- Remove the marinated pork from the refrigerator and thread onto skewers. Discard any excess marinade.
- Grill the pork skewers for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
- While the pork is grilling, warm the corn tortillas on a separate grill or in a dry skillet.
- Once the pork is cooked, remove it from the skewers and chop into small pieces.
- To assemble the tacos, place a spoonful of the chopped pork onto each warm tortilla.
- Top with diced fresh pineapple, chopped cilantro, and diced onion.
- Serve the tacos al pastor with lime wedges on the side for squeezing over the top.
