Mexican Papas Con Chorizo
Papas con Chorizo is a classic Mexican dish made with potatoes and spicy chorizo sausage.
Ingredients - Serves 4
- Lime wedges - For serving
- Avocado - 1, sliced (for serving)
- Salt and pepper - To taste
- Cilantro - 2 tablespoons, chopped
- Jalapeno - 1, seeded and diced
- Tomato - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Chorizo sausage - 8 ounces, casing removed
- Potatoes - 4 medium, peeled and diced
Let's Get Started
- In a large skillet, cook the chorizo over medium heat until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the diced potatoes and cook until golden brown and crispy, about 10 minutes.
- Add the diced onion, minced garlic, diced tomato, and diced jalapeno to the skillet. Cook until the vegetables are softened, about 5 minutes.
- Return the cooked chorizo to the skillet and mix well with the potatoes and vegetables. Season with salt and pepper to taste.
- Remove from heat and sprinkle with chopped cilantro.
- Serve hot with sliced avocado and lime wedges on the side.
