Mexican Enchiladas

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F.
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through.
  3. Add the chili powder, cumin, salt, and black pepper to the skillet. Stir well to combine.
  4. Warm the corn tortillas in the microwave or on a skillet until pliable.
  5. Spread a spoonful of enchilada sauce on the bottom of a baking dish.
  6. Place a spoonful of the ground beef mixture onto each tortilla, then roll it up and place it seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle the shredded cheese on top.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro and serve with sour cream on the side.
