Ingredients - Serves 4

Let's Get Started

  1. Soak the rice vermicelli noodles in hot water for 5 minutes, then drain and set aside.
  2. Heat the vegetable oil in a wok or large skillet over medium heat.
  3. Add the shrimp and tofu, and stir-fry until the shrimp is cooked and the tofu is golden brown.
  4. Push the shrimp and tofu to one side of the wok, and pour the beaten egg into the empty space.
  5. Scramble the egg until cooked, then mix it with the shrimp and tofu.
  6. Add the drained noodles to the wok, and stir-fry for 2-3 minutes until heated through.
  7. Add the bean sprouts and green onions, and stir-fry for another minute.
  8. Remove from heat and transfer the mee grob to a serving dish.
  9. Garnish with crushed peanuts and chopped cilantro.
  10. Serve hot with lime wedges on the side.
