  1. In a large saucepan, heat some oil over medium heat.
  2. Add the mustard seeds, cumin seeds, and red chili flakes. Cook until the seeds start to pop.
  3. Add the chopped onion, garlic, and grated ginger. Sauté until the onion becomes translucent.
  4. Add the diced mangoes, brown sugar, raisins, apple cider vinegar, and salt. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, or until the chutney thickens.
  6. Remove from heat and let the chutney cool completely.
  7. Transfer the chutney to sterilized jars and store in the refrigerator.
  8. Serve chilled with your favorite Indian dishes or as a condiment for sandwiches and snacks.
