Mango Chutney
This sweet and tangy mango chutney is a perfect accompaniment to Indian dishes or as a condiment for sandwiches and snacks.
Ingredients - Serves 8
- Salt - 1/2 teaspoon
- Red chili flakes - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Raisins - 1/4 cup
- Brown sugar - 1/4 cup
- Apple cider vinegar - 1/2 cup
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Ripe mangoes - 4, peeled and diced
Let's Get Started
- In a large saucepan, heat some oil over medium heat.
- Add the mustard seeds, cumin seeds, and red chili flakes. Cook until the seeds start to pop.
- Add the chopped onion, garlic, and grated ginger. Sauté until the onion becomes translucent.
- Add the diced mangoes, brown sugar, raisins, apple cider vinegar, and salt. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, or until the chutney thickens.
- Remove from heat and let the chutney cool completely.
- Transfer the chutney to sterilized jars and store in the refrigerator.
- Serve chilled with your favorite Indian dishes or as a condiment for sandwiches and snacks.
